healthy banana oatmeal cookies
I recently posted a healthy banana bread recipe, and since then I have been trying new recipes that I can share on my Blog! This weeks recipe is for healthy banana oatmeal cookies, which taste delicious! With out further a do, let's get started with the recipe:
Ingredients:
100g instant oats
90g whole wheat flour
1 and 1/2 teaspoons of baking soda
1 teaspoon of cinnamon
1/4 teaspoon of salt
2 tablespoons of melted coconut oil
1 large egg
1 teaspoon of vanilla extract
120ml of maple syrup
2 medium bananas
Method:
1. Whisk the oats, flour, baking soda, cinnamon and salt in a bowl. In a separate bowl whisk the melted coconut oil, egg and vanilla extract, then stir in the maple syrup.
2. Combine the mixtures together and then add in the mashed banana. Leave the mixture in the fridge for 30 minutes.
3. Preheat your oven to 165 degrees Celsius. While this is preheating, line your baking trays (I chose to use two). Place 12-15 scoops of the mixture on your baking tray(s) and then flatten it to half of the size. Bake the cookies for 10-12 minutes until golden brown. Then enjoy!
I hope you enjoy these tasty, guilt-free cookies as much as I do! If you make these cookies make sure to tag me in your pictures because I would love to see them. Speak to you next week! Georgia X
